However, some steamers are so shallow that one cannot even put a standard dish (with food) in, without touching the lid. I am still very bugged that I can't find any bamboo steamer (or just a lid) for steaming a whole fish. I hope you guys have some solution for steaming whole fish. 🙏

I think you'd have to use it several times to allow the food tastes to overwhelm the bamboo tastes. Shudder. I could never get there.

Quality bamboo steamers have been traditionally constructed without them. I've had mine for over 20 years. You just have to know what to look for in terms of the type of bamboo and construction. For topics like this, I wish ATK would invite experts with deep and direct experience in the cuisine and equipment vs. what superficially makes sense.

Nor glued bottoms.
If all-bamboo is good enough for commercial use, I can't imagine it lacking in any way for home use.
Granted, he does say the slight misalignment affected nothing but the aesthetic, I find their conclusion odd.
