It is boneless beef blade, well aged. I will pressure cook instead so the ligaments and connective tissues becomes tender. I don't agree with "blanching out the impurities" and throwing away the blanching water. The froth is only not esthetically pleasing but it is part of the beef flavor. No one will notice the froth once it is cooked into the resulting sauce. It is like throwing away the essence and flavor of the beef. Thank you for sharing.
