I prepared this dish exactly as described, although I had to make one substitution. There are no Jerusalem artichokes to be found here in suburban Maryland in the midst of winter, so I used two small sweet potatoes, peeling and dicing them as shown. The result was fantastic; the Apple-balsamic purée was delicious, and the beer sauce added just the right touch.

Chef please keep doing what you are doing. I just subscribed. I plan to study all of your videos and plan the ones I want to make. This is precisely what I was looking for. Not just some amateur with granny’s recipe but real professional methods. Don’t worry about a few people who know less than nothing. Your work is top shelf and I encourage you to keep doing more.
