Awesome video. Isn’t Santa Maria style tri-tip traditionally reverse-seared? You should give that a go on the mini Chud box. First time I tried on on my pellet grill it didn’t come out as well as I would have liked. The butcher at my local grocery store was stoked for me at ask for one though because unlike Texas a lot of bbq cuts are uncommon up here in NE.
