I have very soft water here, and the (mostly French) flour is at 9% Protein.&lt;br&gt;&lt;br&gt;I wonder whether there is a difference between hard and soft water for baking.&lt;br&gt;&lt;br&gt;Many thanks and Tschüss]]></description>
