i like them the day of, but the next day they are always rock hard unlike the packaged ones. anybody have any ideas on how to keep them chewy for a couple of days?

ABSOLUTELY brown the butter. Do not skip that. Also, if you've got it, some applewood smoked salt.

YUM! Don't substitute a store brand for the cereal, the Kellogg's version is decidedly better in texture.
