I think you should have replaced the lettuce with actual kimchi. And to capture the korean flavors i would have added some form of garlic/ginger/sweetness to the mayo with that gochujang. Ginger, garlic and sweetness is extremely common in Korean BBQ. (I worked as a korean BBQ chef for many years). You could even go as far as making your own Sogalbi shortrib pattys.
