This is my favorite bread recipe. It needs no kneading, it’s very easy to make and you get this absolutely amazing artisan bread just like grandma used to make! Oh, and that crunch – music to my ears!
And it’s vegan!

Here is the full recipe:
πΎπΆ Ingredients:
– 1 Β½ cup warm water
– 2 tsp. of oil
– 2 tsp. of molasses
– 2 cups of rye flour
– 1 cup of white flour
– 2 tsp. of salt
– 2 tsp. of cocoa powder
– Β½ tsp. of dry yeast
– 2 tsp. of caraway seeds
– 1 tsp. ground coriander seeds
π©βπ³π Instructions:
1. Mix warm water, oil, and molasses.
2. Combine all the dry ingredients in a separate bowl, add water – mix and stir together.
3. Cover the dough and let it rise in room temperature for at least 12 hours.
4. Next, preheat a cast iron pot for 30 minutes at 450FΒ° without a lid.
5. Meanwhile, gently shape the dough into a ball by using a little bit of flour, and place it on a parchment paper.
6. Proof the dough for the second time for 30 minutes.
7. Place the dough with the parchment paper into the hot cast iron pot, cover it with a lid and bake it for about 35 minutes.
8. Next, open the lid and bake it for another 10-15 minutes.
9. Make your favorite sandwich and enjoy! π

Finaly got some rye flour and was looking for the right recipe! This one looks very similar to the no-kneading recipe Ive been using for my everyday, good-with-everything loaves, I started baking my own bread after found it; The key is the time! now look forward to try the rye version!

What is the room temperature at your place ?
I don't usually write reports, but maybe you can let me know what is happening. I followed your method to the letter twice. The first time the dough was so runny in the morning that I just discarded it. Yesterday I tried again. The dough was very runny and took an extra cup of white flour to just transfer to the work surface, there was no question of shaping it by hand. I then baked it in the Dutch oven after the second proofing. It rose about half an inch. The finished product tastes like rye bread but is definitely not presentable. Any thoughts?

Cacao confused me. Does it smell when baked ? It is to make the bread darker ? I just baked a Check rye bread with caraway seeds, but it was not very successful, my bad of course. I want to try your recipe now. Looks amazing.

2. Your dutch oven seems on a small side. I have a 7-quart dutch oven. Do I need to x1.5 – x2 the recipe? If yes, how will it affect the baking times? What do you think?

I use stout for liquid and add espresso powder to make it more like Dark Russian Rye Also I used 2 white V 1 rye as I worried about it being too heavy to rise. I will switch to your ratio Nice video, thanks
Well, it's a great recipe, but the super loud music is truly obnoxious!
What happens if I let it rise more than 12 hours? Should I put in the refrigerator at some point? I would like to make it today, but it is almost noon here.
