Do not chop ginger.... zest grate it. 'Same for your garlic.

Also to enhance your teriyaki sauce...specifically use a beef, chicken, seafood broth instead of water.

Preferentially sesame oil on the prep is nicer then the texture of the seeds.

instead of a 15 bottle of Mirin could you just use honey? Which would also eliminate the corn starch?
