Cook it the same as mashed potatoes and mix in a few potatoes. They are hard to find. I even pester produce departments to get it but they don't because there is not much demand. People are not educated on what it is. I finally found it at Whole Foods at a really high price. But . . . I just found it at a Mexican Produce store at $1.99 per pound!!! Now looking for more recipes for celery root.
