Bhapa Chicken, a traditional Bengali dish, involves steaming marinated chicken, resulting in a flavorful and tender dish. Here’s a detailed recipe for making Bhapa Chicken:

### Ingredients:

**For the Marinade:**
– 500 grams boneless chicken, cut into medium pieces
– 1/2 cup thick yogurt
– 2 tablespoons mustard oil
– 2 tablespoons poppy seeds (posto), soaked in warm water for 30 minutes
– 2 tablespoons mustard seeds, soaked in warm water for 30 minutes
– 2-3 green chilies (adjust to taste)
– 1 tablespoon ginger paste
– 1 tablespoon garlic paste
– 1/2 teaspoon turmeric powder
– Salt to taste
– Freshly ground black pepper to taste

**For Steaming:**
– Banana leaves or aluminum foil (for wrapping)
– Fresh coriander leaves, chopped (for garnish)

### Instructions:

1. **Prepare the Marinade:**
– Drain the soaked poppy seeds and mustard seeds.
– In a blender, combine the soaked poppy seeds, mustard seeds, green chilies, ginger paste, garlic paste, and yogurt. Blend until you get a smooth paste.
– In a large mixing bowl, add the chicken pieces and the paste. Mix well to ensure all the chicken pieces are well coated.
– Add mustard oil, turmeric powder, salt, and freshly ground black pepper to the bowl. Mix thoroughly.
– Cover the bowl and let it marinate in the refrigerator for at least 1 hour. For best results, marinate for 2-3 hours or overnight.

2. **Prepare for Steaming:**
– If using banana leaves, cut them into large squares and soften them by briefly heating them over an open flame or dipping them in hot water. If using aluminum foil, cut it into large squares.
– Place a portion of the marinated chicken in the center of each banana leaf or foil square.
– Fold the leaf or foil to form a packet, making sure it is sealed well to prevent steam from escaping.

3. **Steam the Chicken:**
– Set up a steamer or a large pot with a steaming rack.
– Place the packets in the steamer. If using a pot, ensure the water level is below the steaming rack.
– Cover and steam the chicken over medium heat for about 30-40 minutes, or until the chicken is fully cooked and tender.

4. **Serve:**
– Carefully open the packets, as the steam can be very hot.
– Transfer the steamed chicken to a serving dish.
– Garnish with freshly chopped coriander leaves.
– Serve hot with steamed rice or roti.
