蘋果豬扒 Pork Chops with Apples
材料 Ingredients
豬梅肉扒400克 / 400g Boneless pork chops
蘋果2個 / 2 Apples
洋蔥 1/2個 / half Onion
糖 3/4湯匙 / 3/4 tablespoons Sugar
肉桂粉 1湯匙 / 1 tablespoon Cinnamon ground
生抽 1湯匙 / 1 tablespoon Light soy sauce
老抽 1茶匙 / 1 teaspoon Dark soy sauce
熱水 適量 / Hot water, to adjust
酒 少許 / Cooking wine, a drizzle
豬扒醃料 Marinade for pork chops
蒜片 5-6瓣 / 4-5 cloves Garlic slices
黑胡椒 適量 / Black pepper, to taste
蠔油 1湯匙 / 1 tablespoon Oyster sauce
油 少許 / Oil, a drizzle
做法 Method
1. 蘋果切件,浸鹽水以防變色,備用。
Cut apples into pieces, soak them in salt water to prevent browning, set aside.
2. 洋蔥切件,備用。
Cut the onion into pieces for later use.
3. 豬扒下醃料醃30分鐘。
Add marinade to the pork chops and sit for 30 minutes.
4. 在鍋中加油,開中火加熱,待有少許白煙升起,下豬扒煎香,待一邊煎香才翻另一邊。
Add oil to a pot and heat it over medium heat until white smoke emerges. Add the pork chops and pan-fry until fragrant, then turn to the other side.
5. 豬扒兩面煎香後盛起;在同一鍋中下洋蔥、蒜頭及蘋果,再將豬扒回鍋放面。
When both sides are pan-fried, remove to a plate. Add onions, garlic and apples to the same pot, then return the pork chops, place at the top.
6. 加蠔油、肉桂粉、糖及生抽,沿鍋邊下少許酒,再加熱水浸過食材。
Add oyster sauce, cinnamon, sugar and light soy sauce. Drizzle some cooking wine along the rim of the pot, then pour some hot water into the pot, just to cover all the ingredients.
7. 蓋上鍋蓋轉細火炆煮5分鐘,開蓋後將豬扒翻另一面,加鹽同老抽,轉中火慢慢煮至收汁。
Put on the lid, simmer over low heat for 5 minutes. Open, turn the pork chops over, sprinkle some salt and add dark soy sauce. Turn to medium heat and simmer until the juice is reduced. Enjoy!
