🇮🇹✨Fresh Mussels
Ingredients:
🦪 1 lb mussels
🌿 1 bulb fennel
🧅 1 onion
🌰 Nutmeg
🌱 Fresh basil
🍷 1 cup white wine
🧂 Salt & pepper
🫒 Olive oil
👨🍳Instructions:
1. Finely slice the fennel and onion (a mandolin works best!).
2. In a large pan, heat up plenty of olive oil and sauté the fennel and onion. Season with salt, pepper, and a dash of nutmeg.
3. Once softened, add the mussels, white wine, and lots of fresh basil. Toss everything together, cover, and cook until the mussels open.
4. Plate it to perfection, letting all those delicious fennel-onion juices soak into the mussels.

Well, I am now a retired ( Invasive) Cardiologist. I can try that Mandolin without fear of using sick days. Giovanni , what brand do you use that is easier to use and has some safety?
Ah yes, the noble mandolin. A totally safe and ubiquitous in-home utensil.
