๐ฟPasta alla Crudaiola๐
Orecchiette con Pomodorini, Rucola e Ricotta Salata
A fresh and simple summer pasta! Perfect for hot days when you want something light but satisfying!
Ingredients:
๐ 1 lb orecchiette pasta (fresh if possible)
๐
1 lb cherry tomatoes, halved
๐ง 1 clove garlic, finely chopped
๐ฑ A handful of arugula (rucola)
๐ฟ Fresh basil leaves
๐ซ Extra virgin olive oil
๐ง Salt & black pepper
๐ง Ricotta salata
Instructions:
1. In a large bowl or tray, combine halved cherry tomatoes, chopped garlic, olive oil, salt, pepper, and torn basil. Let it sit for 10 minutes to marinate.
2. Cook the orecchiette until al dente, then drain and toss immediately into the tomato mixture.
3. Add in a handful of arugula and mix everything together.
4. Top with grated ricotta salata and an extra drizzle of olive oil.
