🇮🇹🍝Spaghetti alla Poveriello
This is known as the poor man’s pasta from Naples. A humble dish from the cucina povera tradition🇮🇹
Ingredients:
🍝 8 oz spaghetti
🥚 6 eggs
🥄 1 tbsp lard
🧂 Salt
🧀 Pecorino Romano
🌶️ Black pepper
Instructions:
1. Bring a pot of salted water to a boil. Cook the spaghetti.
2. In a large pan, melt the lard. Crack in 4 eggs and cook them sunny side up on low heat, so the yolks stay runny and don’t overcook. Season with black pepper.
3. Add the cooked pasta straight over the eggs with a splash of pasta water.
4. Turn off the heat and mix in a generous amount of pecorino. Toss gently until creamy.
5. Optional: Fry the remaining 2 eggs and top each plate.
