🇮🇹🥒Spaghetti alle Zucchine

For Mother’s Day I’m keeping it simple but only with the best ingredients. This kind of dish lets everything shine. The olive oil? It’s not just for frying, it makes the sauce!

AD | That’s why I’m using Bono Extra Virgin Olive Oil. It gives the zucchini a golden, rich flavor and ties the whole dish together with a silky finish. 🫒

Ingredients:
🥒 2 zucchinis
🍝 8 oz spaghetti
🧄 4 cloves garlic
🧀 Plenty of freshly grated Parmigiano Reggiano
🌿 Fresh basil
🧂 Salt
🫒 Bono Extra Virgin Olive Oil

Instructions:
1. Slice the zucchini thin using a mandolin.
2. Fry the zucchini in abundant Bono Extra Virgin Olive Oil until golden and crisp.
3. Meanwhile, bring a pot of salted water to a boil and cook the spaghetti until al dente.
4. Add the spaghetti straight into the pan with the zucchini, along with a splash of pasta water to bring it all together.
5. Turn off the heat and add a generous handful of freshly grated Parmigiano Reggiano and lots of fresh basil.
6. Toss until perfectly creamy, and finish with a final drizzle of Bono Extra Virgin Olive Oil.
