This time, I took a smoky, juicy pork butt and gave it the full Tocino treatment—sweet, garlicky, a little red (okay, very red)—and smoked it low and slow on the Ninja Woodfire Pro XL. But I didn’t stop there. I made a special Filipino relish called achara from scratch (pickled papaya never looked so good) and even whipped up a Tocino-inspired BBQ sauce. No coleslaw here, folks—we’re going full Pinoy on this pulled pork sandwich!
