I can proclaim this as my award-winning recipe. Not to over blow the award, but it was a chili cook off at my wife’s work, a competition against five other chilis with around 30 voters, but I’ll take the praise!
A word of warning: it is very spicy.
Spicy Smoked 3 Meat Chili Ingredients
1 pound ground beef
1 pound sausage
2 packages of chorizo pork or beef
4 cans Ro-Tel hot diced tomatoes
2 white onions
1 serrano pepper
1 jalapeno pepper
1 poblano pepper
1 can Coors Light (never use hoppy beer)
12 spoon fulls of the @MeatChurchBBQ Texas Chili Seasoning
Dash of oregano
2 tablespoons of brown sugar
3-6 minced fresh garlic cloves
Dash of Tabasco
Optional: Shredded cheese and sour cream
To make it less spicy: remove all pepper seeds, use regular Ro-Tel diced tomatoes instead of Ro-Tel hot diced tomatoes, and avoid the Tabasco sauce.
It’s essential to use the Meat Church Texas Chili Seasoning. I have no affiliation with Meat Church, I’ve just found it to be clearly the best chili powder you can buy.
Spicy Smoked 3 Meat Chili Instructions
Cook the meat thoroughly.
Add all of the ingredients to the pot.
After the meat is cooked, dump it in the pot without draining the grease.
Place it on the smoker at 225 for two hours, reduce the heat to 200 degrees, and smoke it for four more hours.
Note: a crock pot also works; you just won’t have the smoky flavor.
