    Gemma, I know it’s sausage meat and you said you just buy sausage meat at any butcher’s, but I’m unclear as to what the FLAVOR is like. What would be a similar substitution in the USA? Brats? Italian sausage? Chorizo (I know it’s not that)? That’s pretty much it for fresh sausage meat here that you can buy in the store. I did buy spicy Italian sausage yesterday, just because I figured that would taste good anyway, but I’d love to know what it’s SUPPOSED to taste like. What seasonings are used in it in Ireland? Thanks! 🙂
