🍓 Strawberry No-Bake Dessert Cups Recipe | No eggs! | Mini cheesecake



Easy, creamy, and refreshing dessert made without eggs or gelatine! Layers of crunchy biscuit base, smooth cream cheese frosting, and fresh strawberries. Perfect for a quick, fuss-free treat.

🛒INGREDIENTS

✅ for the strawberry confiture (jam):
▪️ 400 g (14,1 oz) strawberry + 100 g (3,5 oz) for decoration
▪️ juice of half a lemon
▪️ 100 g sugar (adjust to taste)
▪️ 30 g (1,05 oz) cornstarch
▪️ 60 ml (2 oz) water

✅ for the frosting:
▪️ 150 ml (5 oz) whipping cream (cold)
▪️ 400 g (14,1 oz) cream cheese
▪️ 100 g (3,5 oz) powdered sugar (adjust to taste)
▪️ 5 g (0,2 oz) vanilla sugar (or 1 tsp vanilla extract)

✅ for the cookie layer:
▪️ 150 g (5,3 oz)favorite cookies
▪️ 50 ml (1,7 oz) melted butter

7-8 dessert cups (150 ml)

📝INSTRUCTIONS

1️⃣ Strawberry Confiture (Jam):
✅Prepare the cornstarch slurry:
▪️ In a small bowl, combine sugar and cornstarch.
▪️ Gradually add water while mixing until smooth.
✅Prepare the strawberries:
▪️ Blend the strawberries until smooth (you can strain for seedless jam if desired).
✅Cook the jam:
▪️ Pour the strawberry puree into a saucepan and add lemon juice. Mix well.
▪️ Over medium heat, bring the mixture to a simmer (not a full boil).
▪️ While stirring continuously, slowly pour the cornstarch mixture into the strawberry puree (to prevent clumping).
✅Thicken the jam:
▪️ Keep stirring constantly and bring the mixture to a gentle boil.
▪️ Once bubbles appear, cook for 30 seconds (this activates the cornstarch for thickening).
✅Cool & store:
▪️ Remove from heat and transfer to a bowl.
▪️ Cover with plastic wrap (pressed directly on the surface to prevent a skin from forming).
▪️ Let it cool to room temperature before using or transferring to a piping bag (optional).

2️⃣ Cream Cheese Frosting:
▪️ Whip cold cream to soft peaks (ensure cream and mixing bowl are chilled for best results).
▪️ In a separate bowl, whip cream cheese and powdered sugar until smooth (sift sugar to avoid lumps).
▪️ Fold the whipped cream into the cream cheese. Be careful not to overwhip, just mix until smooth!
▪️ Chill for 10–15 minutes before piping (helps stabilize the frosting).
▪️ Transfer to a piping bag with a nozzle if desired.

3️⃣ Cookie Crumbs:
▪️ Blend cookies into fine crumbs (or crush in a sealed bag with a rolling pin).
▪️ Mix with melted butter until evenly moistened.

4️⃣ Assembling the Dessert Cups:
▪️ First layer: Press cookie crumbs into the bottom of each cup (use the back of a spoon to compact lightly).
▪️ Second layer: Add strawberry jam (pipe or spoon evenly to avoid mixing with crumbs).
▪️ Third layer: Pipe the frosting (ensure it’s chilled for clean layers).
▪️ Repeat 1 time ending with frosting for a neat finish.
▪️ Chill for at least 1 hour (helps layers set and flavors meld).
▪️ Decorate with fresh strawberries.

💡For a thicker frosting add less powdered sugar.
