🍖🔥🌿 Glazed Berkshire Pork Chop
This was ridiculously good, the intense sear, sweet sticky and savoury glaze, fatty richness low key giving that cha siu bbq pork vibes.
PREPARATION
Pork seasoned in a 6:1 kosher salt to msg blend. Left to dry brine overnight in the fridge. Mixed up room temp butter, honey, garlic, black pepper, and fine chopped rosemary to brush on the chop to glaze.
COOK
Rubbed grill grates with fat cap of the chop. Then seared extremely close to the broiler element. Flipping every 30-45 seconds. Lowered the distance to the element, began glazing, flipping every minute. Rested on the board and glazed one more time before slicing.
