PART1. Cocoa Cake Base
Corn oil 41g
Milk 66g
Cake flour 55g
Cocoa powder 8g
Egg yolk 80g
Egg white 110g
Granulated sugar 45g
Lemon juice 2g
Salt 1g

PART2. Mousse Paste
Cream cheese 230g
Granulated sugar 45g
Whipping cream 150g
Milk 120g
Gelatin sheet 12g

PART3. Chilled chocolate sauce
Whipping cream 40g
Dark chocolate 60g

1 Emulsify corn oil and milk evenly,then add the sifted cocoa powder and cake flour, mixing until no dry flour remains,add egg yolk mix well.

2 In a mixing bowl, whip the egg whites, sugar, and lemon juice until soft peaks form.

3 Divide into two portions and fold into the egg yolk mixture, then fold everything back into the remaining egg whites. Mix until well combined.

4 Bake in a preheated oven at 150°C (302°F) for 30 minutes with top and bottom heat.

5 Make the chilled chocolate sauce:melt the chocolate and whipping cream together in a water bath.

6 Soften the cream cheese and mix it evenly with the granulated sugar,whip the whipping cream until it reaches 60% stiff.

7 Heat the milk and add the softened gelatin sheet and mix evenly,Mix the milk with the cheese evenly and then add the whipping cream and mix evenly.

8 Divide the mixture into 5 portions (50g, 80g, 100g, 120g, 150g), add 4 portions of chilled chocolate sauce and mix evenly (40g, 30g, 20g, 10g).

9 Use a 6-inch mousse ring to press out the cake base,Pour the mousse paste into the mold in order from light to dark,Freeze for more than 2 hours.
