  1. Exactly! In Arctic Norway we had a tradition for salt pork with fish. Salt pork is now completly repleced by bacon meaning it is hard to find in the grocery. I use to buy pork and salt it at home. Processed salt pork, like I said, is replaced by bacon.

    I started makning carbonara. Ofcourse I couldn't find pancetta in the grocery. I started using salt pork. No bacon on me. I call my carbonara Arctic Carbonara,

    The funny thing is an Italian-Norwegian couple spend several weeks here each year but I don't dare to introduce my Arctic Carbonara to them
