🔥🦃 💦 Whole Grilled Turkey



PREPARATION
Whole turkey thawed in a cooler with cold water *in retrospect 1 usually thaws overnight but having 2 in there they were still somewhat frozen in the middle. Spatschcoked removing the spine and flattering the breast bone.

Made a savoury salt, 6:1 kosher salt to MSG. Seasoned all over and into the fridge on a wire rack to dry brine overnight. Before grilling rubbed with oil and a seasoning blend.

COOK
Grilled over a bed of charcoal to slowly render the skin up and away from the coals, used bricks wrapped in foil to keep it flat to the cooking surface. Flipped and continue to grill. Removed coals and put into the ceramic egg with a heat deflector for more consistent heat for a 300f cook – the ceramic and closed lid make a big difference and woulda taken much longer just on the open pit. Also grilling on the egg first would have been hard to reduce the temp after.

REST
Once internal reaches 155-160f removed from heat and allowed to rest for 20 mins uncovered in a warm oven to keep the skin crispy.
