Chanterelle PASTA

Chanterelle Pasta Recipe

8oz dried packaged spaghetti
2-3 Tablespoons olive oil
2-3 Tablespoons unsalted butter
1/2 cup whole milk or heavy cream
2 cups raw chanterelle buttons
1 cup chopped fresh chives
12 fresh basil leaves
1 cup grated parmesan cheese
Red pepper flakes to taste
Salt to taste
Ground black pepper to taste
Additional 2 Tablespoons butter, 2 Tablespoons olive olive to dress the hot pasta and 1/2 cup parmesan cheese for garnishing on top before serving.

Method:

SauteƩ chanterelles in the butter and olive oil until browning begins then add half of the chives and all of the the milk stirring constantly to combine. Bring up to a simmer and shut off the heat. Add to drained, hot pasta along with other ingredients that are left, toss, top with more cheese and serve immediately.

Prepare pasta according to package directions. I add mine to salted boiling water and cook 6-7 minutes then drain and immediately mix with other ingredients.
