When I tell you this is one of the most delicious dishes there is, you have to believe me. Creamy, rich, indulgent & cheesy.

Cheese sauce
1 tbsp butter
2 tbsp flour
1/2 cup cream
500 ml milk
1 onion
1 bay leaf
2 cloves
1/2 cup cheese
Salt to taste
1/2 tsp pepper
Make a slit on the onion & add the bay leaf in the slit. Prick the cloves in the onion.
Heat the butter in a pan. Add in the flour & cook for 1 minute. Add the milk & the onion & let it thicken slightly. Add the cream & mix well. Add in the salt, pepper, cheese & cook till the cheese melts completely. Remove the onion from the sauce & keep aside.

Tomato sauce
1 tbsp butter
1 tbsp garlic, finely chopped
1 onion, finely chopped
1/2 capsicum, finely chopped
1 tsp ajwain
2-3 tomatoes, finely chopped
2 tomatoes, pureed
1 tbsp sugar
Salt to taste
1 tsp pepper
1 tbsp oregano
1 tbsp chilli flakes
8-10 basil leaves
Heat butter in a pan. Add in the garlic & onion & cook for 2-3 minutes. Add in the capsicum & ajwain. Add the tomatoes, tomato puree, salt & cook for 4-5 minutes. Add the basil, sugar, oregano, chill flakes & cook for 2-3 minutes. Remove half the sauce in a bowl.

Assembly
200 gms paneer, cut into thin slices
1/4 cup cheese, grated
1/4 cup mozzarella, grated
On the remaining tomato sauce in the pan, add a layer of the paneer. Top it with the cheese sauce. Add another layer of paneer & top it with the remaining tomato sauce. Cover with any remaining paneer slices & top it up with the cheese sauce. Add a generous layer of the cheese & mozzarella. Cover with a lid & cook till the cheese melts. Garnish with chilli flakes, oregano, basil leaves. Serve hot & dig in.!
