#TBT One of the most unique ways to cook a Prime Rib – salt baked. A stunner with mashed potatoes, sautéed mushrooms and a gravy for the roast dinner essentials.

PREPARATION
Salt Blend:
-Blend garlic, onion, thyme, and rosemary with a portion of kosher salt to infuse flavor. -Mix this blended batch with the remaining salt.

Salt Mixture:
-Combine 1 egg white per 1 lb of salt (6 egg whites for 6 lbs of salt) to create a damp mixture.

Prepare the Roast:
-Untie and trim any excess fat or sinew for a more even shape and expose the meat
-Season generously with black pepper.

Salt Cocoon:
-Apply a base of salt and form a sealed cocoon around the meat.
-Keep bones separate from the roast to help protect the exterior from overcooking and ensure even doneness.

COOKING
Reverse Sear – First Stage:
-Preheat the oven to 225°F on convection bake.
-Place roast in the oven and cook until the internal temperature reaches 125°F.

Rest & Salt Removal:
-Remove the roast from the oven, allow to rest in the salt for 30 minutes.
-Carefully crack and remove the salt crust, brushing off any excess salt. Rest for an additional 15 minutes to allow the internal temperature to rise to 133F.

Final Sear:
-Preheat the oven to 500°F convection broil
-Brush the roast with beef tallow
-Back in the oven for 10 minutes to develop a crust (do not peak)

Final Rest:
-Let the roast rest for 10 minutes before slicing. The internal temperature should be 136°F at slicing.
