  1. How very fking modern of you to do a cooking show and not name the ingredients aloud as you're cooking 1:45 MILK and FLOUR are added. The cook host should say each ingredient, not just rely on on-screen text. Not cool, Claire. I blame the NY Times, enemy of the people.

  2. You can get cheaper bowl scrapers that cost about $1, but the one Claire is using in the video is from Mafter and last I checked it was about $11 on Amazon. It is well worth the additional price, it is a stiff plastic, but somewhat flexible so it takes to the shape of the bowl without leaving scraps behind. It does require hand washing is it is susceptible to warping in high heat (can be bent back, sort of). I have bought several of these over the years.

  3. 1 cup/240 grams whole milk or buttermilk
    6 tablespoons/50 grams plus 3 3/4 cups/490 grams all-purpose flour, plus more, if needed, for work surface
    5 large eggs, chilled
    2 tablespoons vegetable or olive oil
    ¼ cup/50 grams granulated sugar
    10 grams kosher salt (2 3/4 teaspoons Diamond Crystal or 1 1/2 teaspoons Morton)
    2 teaspoons/6 grams active dry yeast
    ½ cup/113 grams unsalted butter (1 stick), cut into 1/2-inch pieces, chilled, plus more, at room temperature, for pans
