I don't have any question regarding the macro-nutrients, but I'm wondering whether one dish of this is enough to make you full to some extent? Each portion looks meager to me. I would probably take two trays in one meal.

Just a thought…if you cover your sheet pans with aluminum foil it makes for easier clean up. It’s great if you only have a few sheet pans and need to use them a few times for the meal prep. Just through the foil away, rewrap the pan and you’re good to go.
