BEEF ‘N CHEESE BAR-B-QUE
2Tbsp butter (.25c)
1/4c minced onion (.17c)
3/4lb ground beef ($3.47)
2Tbsp flour (.02c)
1Tbsp sugar (.04c)
1/8tsp ground cloves (.02c)
1/4tsp dry mustard (.03c)
dash of pepper (.01c)
1Tbsp Worcestershire sauce (.06c)
2Tbsp water
1c shredded cheddar cheese ($1.12)
4 sandwich buns, buttered and toasted (.73c)
In skillet melt butter. Add onion and ground beef; sauté until onions are tender and beef is browned. Stir in flour, sugar, cloves, mustard and pepper; add Worcestershire sauce, water and cheese. Heat stirring constantly, until mixture is slightly thickened and cheese is melted. Spoon mixture onto hot, buttered buns and serve immediately. Makes 4 servings, $1.48 per serving.
TUNA AU GRATIN
1 – 9oz can tuna ($1.76)
1/2c cottage cheese (.49c)
5 slices bread, cut into cubes (.35c)
2Tbsp butter (.25c)
3Tbsp flour (.03c)
1tsp paprika (.04c)
1 1/2c milk (.30c)
1/2c shredded cheddar cheese (.56c)
2Tbsp butter, melted (.25c)
Combine tuna, cottage cheese and half of bread cubes, reserving the remaining cubes for topping. Spread tuna mixture in bottom of 1 1/4qt baking dish or 4 individual 1 cup casseroles. In saucepan melt butter; blend in flour and paprika to form a smooth paste. Add milk; heat, stirring constantly, until mixture thickens. Add cheese; continue heating stirring constantly, until cheese melts. Pour sauce over tuna mixture; top with reserved bread cubes. Pour melted butter over bread. Bake at 350 for 25 to 30 minutes. Makes 4 servings, $1.01 per serving
SPAGHETTI BAKE
2Tbsp butter (.25c)
1/4c minced onion (.17c)
1/2lb ground beef ($2.32)
1/2tsp salt (.01c)
dash of pepper (.01c)
1/4tsp basil (.03c)
1/8tsp garlic powder (.01c)
8oz tomato sauce (.48c)
4oz spaghetti (.25c)
1c cottage cheese (.98c)
In saucepan melt butter. Add onion and ground beef; sauté until onion is tender and meat is browned. Stir in salt, pepper, basil, garlic powder and tomato sauce. Cook spaghetti according to package directions; drain and combine with cottage cheese. Place half of spaghetti in a 1 quart casserole; Top with half of meat sauce. Repeat. Bake at 350 for 25 to 30 mins. Makes 4 servings, $1.13 per serving.
