Good evening, thank you for your video. I have asked many people about making pasta. I normally make it with all purpose flour, yet I was wondering can you use some rice flour with the all purpose flour to make pasta. Can you please tell me if that is a good idea?
I make homemade spinach Rotis and they are delicious. As you have taught me a new way of making pasta, here is my recipe.
3 cups of wheat flour [get a big bag from any Indian grocery store]
5 ounces of baby spinach [cut and put in the blender with 1/2 of a cup of water, blend until a smooth paste is formed. About 3 minutes]
1 teaspoon Salt [leveled]
1 teaspoon Red Chili flakes [leveled]
1 teaspoon ground cumin
1 teaspoon ground coriander
Mix all the ingredients together and form a smooth dough ball. Put the dough ball into a glass container with a lid and place it in the fridge. Dough will last up to 5 days. I normally make 3 rotis for my husband and me for dinner. Roll out just like you would for making homemade pita bread or flatbread. On the stove, place a griddle and heat it up. After rolling the roti out, put a teaspoon of oil on the griddle and cook the roti on medium heat until slightly brown on both sides.

This is the way I learned to make homemade noodles. My Ma's side of the family makes them for every big dinner. I was watching some vids and they were adding water and I'm like 'Whaaaaaaaaaaaaaaaaaaaaaaaat?'
When I made this recipe, my dough was impossible to roll out… it was rubbery, and sprang back to its original shape. It also didn't stretch well, it just broke apart despite being a smooth ball… any ideas what I could have done wrong? Too much kneeding? Not enough? It didnt seem particularly wet or dry either

i made this two times already. Is it good? yes. is it the best pasta i ever had? no. but is it better than store bought? yes. Although store bought to me are a little better in taste wise, these ones don't defer a lot in taste when cooked with seasoning and stuffs. Plus, its so much more cheaper than buying at the store. So yes, I will not buy the store bought again cause I can make em myself now.
