2 Pumpkin Dessert Recipes/Vegan, Oil Free,& Gluten Free



2 Pumpkin dessert recipes is what I will be sharing with you today. These 2 recipes are vegan, oil free and gluten free. I will be sharing a pumpkin snickerdoodle cookie by @FeastingonFruit and a pumpkin brownie recipe by @HalleBurns The full recipes of my version of these recipes below:
Pumpkin Snickerdoodle cookie
2 T pumpkin puree
1 T coconut sugar
4 T oat flour
1/4 tsp cinnamon
1/2 tsp baking powder
1/2 tsp vanilla powder
Topping
1 tsp coconut flour and a dash of cinnamon
Mix all ingredients together and place on a lined baking sheet and form a $” cookie. Bake in a preheated 350 degree oven for 10 to 12 minutes.
Cool for 5- 10 minutes.

5 ingredient pumpkin brownies
1 can pumpkin puree
2/3 cup flour
¾ cup cocoa
½ cup sugar
Pinch of salt
Chocolate chips
Mix all together and place in a lined square 8×8 pan and bake @350 for 25-30 minutes.
Cool before slicing

  1. Those look good. I love pumpkin things this time of year. I will try the cookie, but haven't thought of a sugar replacement for the brownies. I can replace the sugar in the cookies but I don't think I can easily replace the 1/2 cup of sugar in the brownies. Thanks again for the video.

  2. PUMPKIN. That was the biggest snickerdoodle I ever saw. LOL. But it's nice to be able to make just 1. The brownie looked a little dense, but I trust your rating. When I want a decadent brownie or chocolate cake, I go to my nearby health food store, where they have a little dessert case, and buy just one serving. In fact I just picked up one serving of chocolate cake today. I'm just too weak when it comes to anything chocolate. If I made a whole pan of them, I'd be at them all week long. I know I could probably freeze them – but would I??? Ha Ha – probably not.
