Ingredients for Quick & Tasty Chicken Curry:

(Tsp-Teaspoon; Tbsp-Tablespoon)

– Chicken – 750 gms (curry cut with bones)

Ingredients for the Masala:
– Onions cubed – 2 small (100 gms)
– Red tomatoes cubed-2 medium (150 gms )
– Ginger chopped- 1” (12 gms)
– Garlic cloves- 10-11 cloves (12 gms)
– Green chillies-2 chopped (5 gms)
– Cashew nuts -8-10
– Turmeric -1 tsp
– Red Chilli powder-2 tsp
– Coriander powder -2 tsp
– Kashmiri Chilli powder-1 tsp
– Garam Masala powder -3/4 tsp
– Coriander leaves – 4 tbsp -12 gms
– Curry leaves-15 nos
– Salt-1.5 tsp
– Curd/ plain yogurt- 3 tbsp

Other Ingredients:
– Oil – 5- 6 tbsp
– Coriander leaves chopped for garnish-3 tbsp

Preparation:

– Cut the onions and tomatoes into cubes, peel and chop the ginger and garlic.
– Cut the green chillies into 2-3 pieces and chop the coriander leaves.
– Add all the ingredients for the paste in the grinder/blender jar and then blend it till smooth .

Process:

– Heat oil in a pressure cooker and then add the blended masala paste. Now mix and fry on medium heat for around 5 mins till the raw smell/taste is gone.
– Now add the raw chicken and mix and fry on high heat for around 2-3 mins till the color changes.
– Continue frying the chicken for another 3 mins till the chicken is little cooked and oil separates.
– Now add around 250 ml water, give a stir and then close the pressure cooker.
– Pressure cook the chicken for 2 whistles-1 on high heat and 1 on medium heat. Should take a total of 8 mins, 6 mins till the first whistle and 2 mins till the 2nd whistle. Switch off heat and then allow the pressure to release on its own.
– Remove lid and garnish with chopped coriander leaves
– Serve with roti or rice.
