  2. I'm curious about your choice to cook fat side up on the bottom grate. I'm sure you know most guys go fat down to protect from the heat. I added a second shelf to my pellet grill for the express purpose of fat up cooks, not to make more space.

  3. Wow!!! I really should have cooked mine without it wrapped in butcher twine. It looks much better when it is all splayed out.
    What was the surface you trimmed and seasoned the clod on?

    P.S. I have never wanted a Pellet BBQ more than I do right now. That Lonestar Grillz Pellet Smoker looks to be an amazing BBQ.
