I love my sheet pan too, which looks like yours. 😁 I've had mine for over 40 years and have several new ones, but this is my go-to for some reason. Maybe because the food tastes better than on the newer ones. Or maybe because it doesn't buckle like the others no matter what I bake on it.

I love using the pre shredded chicken just like you used. I actually made chicken quesadillas this weekend with it. I hear the chicken in a saucepan with green chilies and some adobo sauce and fill the quesadillas with that before cooking. So simple and delicious. Thank you for sharing these ideas.
