  1. These look amazing! Thanks for the modification suggestions, too. We’re dealing with several diets and allergies in our household so I usually end up making different desserts (or, TBH, my husband almost never gets desserts, poor guy!). These sound perfect for everybody!

  2. Just made the carrot cake muffins! And omg they are so good! However I used date syrup (didn’t have maple) which was nice but might need to use more next time or actual maple to make them a touch sweeter. Or perhaps make a thin icing. And need to use coconut oil too as I only had olive oil which was fine but I could taste it a tiny bit. But that’s my fault because I forgot to restock coconut oil
