this just might be the best dessert we’ve had in a minute 🤩— mango mochi; chewy soft mochi with a perfectly ripe mango! 🥭💛

one of my favorite things we ate in Hong Kong, and so good we went back to the stall again 😂

ingredients //
• 1 cup mochiko
• 1 cup water
• 1/4 cup + 1/2 tbsp sugar
• 3 ripe mangoes, peeled + chopped

directions //
• peel + slice mangoes
• add glutinous rice flour, sugar + water together in a bowl
• cover the bowl with plastic wrap, microwave 3 mins, stir + microwave 40 additional seconds.
• add starch to work surface, roll out the dough until flattened. be sure to not roll it to thin or the dough will stretch and break while wrapping
• add mango in the mochi dough and cut to size, cut any excess dough off and mold to shape
• mango mochis can be stored in the fridge in plastic wrap for a couple of hours!

and even if you’re not a dessert person; you will be now!
