3 Quick & Easy Blanched Almond Flour Dessert Recipes



Here are 3 dessert recipes just in time for the holidays and the festive season! They are made using blanched almond flour. These eggless desserts are easy, quick to make, and extremely delicious to taste!

Recipe 1 – Tahini Almond Cookies – Vegan | Gluten-free, can be made in 30 mins
Ingredients:
1 cup almond flour
1/3 cup tahini
1/4 cup maple syrup
1/4 tsp sea salt flakes
1 tsp vanilla extract
A handful of chopped dark chocolate, and pistachios

Directions:
Add tahini, maple syrup, salt, and vanilla extract to a saucepan. Cook on medium heat for a few minutes, stirring constantly until smooth and blended. Remove from heat and allow this mixture to cool for 15 minutes.
Gradually add almond flour and mix until a dough is formed.
Preheat the oven to 350 degrees F.
Line a baking tray with parchment paper.
Roll a small piece of dough in the palm of your hands and shape them into balls. Place on the tray and flatten slightly with your fingertips.
Use a fork to create the desired design on it.
Garnish with dark chocolate and pistachios on top of the cookie discs in the center.
Bake for 10-12 minutes. Switch off the oven and let the cookies brown slightly for another 5 minutes before removing.
Serve fresh or store in an airtight cookie jar.

Handy tips:
Use honey instead of maple syrup if you are not vegan. You can also garnish with seeds, nuts, regular chocolate, etc.

Recipe 2 – Instant Almond Ladoos – This is a no-cook Indian dessert recipe that can literally be made in 10 mins!
Ingredients:
Almond flour – 1/2 cup
Powdered brown sugar – 1/3 cup
Melted ghee or butter – 2 tbsp
Cardamom powder – 1/4 tsp

Directions:
Powder regular sugar in a blender.
In a mixing bowl add powdered sugar, almond flour, and cardamom powder. Mix them together.
Add the melted ghee to it and mix well until a crumbly mixture is formed.
Knead the mixture until it can hold its shape.
Take a small portion and shape it into a ball by pressing firmly.
Serve or store in an airtight container.

Handy tips:
Use regular white sugar or jaggery instead of brown sugar. To make it vegan, use melted vegan butter.

Recipe 3 – Almond Halwa/Badam Halwa – This is a popular Indian dessert recipe that can literally be made in 30 minutes!
Ingredients:
1.25 cups Almond flour
1 tsp Saffron
1/3 cup Sugar
6 tbsp Ghee
3/4 cup Milk

Directions:
To ¼ cup warm milk, add a tsp of saffron. Keep it aside.
Heat a thick bottom pan and add 2 tbsp of ghee.
Add almond flour once the ghee melts. Mix it together and continue to cook it till the flour turns a bit dark and release an aroma.
Then add ½ cup milk and quickly mix it together till the milk gets absorbed by the flour. This could take a couple of minutes on medium flame.
Next, add the sugar and the saffron-infused milk. Mix it all together. When the sugar melts, the mixture will liquefy. Keep stirring and it will begin to thicken again.
Add a tbsp of ghee and continue to stir.
Keep mixing until the mixture doesn’t stick to the pan at all.
Now add another tbsp of ghee and mix it in.
To check if it’s done, take a small portion of the mixture in a spoon and try to form a ball. If it doesn’t stick to the spoon and holds its shape, then consider it done.
Garnish with some chopped nuts and saffron and serve hot or cold.

Handy tips:
Use brown sugar or jaggery instead of regular white sugar. Butter can be used instead of ghee. To make it vegan, use melted vegan butter and use almond milk instead of regular milk.
