Pineapple Cheese Casserole
2 (15 oz) cans pineapple chunks (drained, but juices reserved)
1 1/2 cups shredded cheddar cheese
1/4 cup pineapple juice (from reserved juices)
1/4 cup all-purpose flour
1/2 cup white sugar
1/2 -1 sleeve Ritz crackers, crushed (depends on how much topping you’d prefer)
1/4 cup butter, sliced

Preheat oven to 350 degrees F.
In a large bowl, combine the first 5 ingredients. Spread into a greased 8×8 baking dish.
Top with crushed crackers and butter slices.
Bake at 350 for 30 minutes

  1. My mom's family is from KY and I've never heard of pineapple casserole, though mom was very fond of the old fashioned Kraft crushed pineapple and cream cheese spread they used to sell in those little jars of 5 or 6 ounces.

  2. I remember making all 3 of the recipes back in the 70s. The pineapple recipe was not a family hit, and the other 2 slowly became replaced with newer recipes. It was an interesting reminder to see them again.

  3. Gochujang Gumbo

    Ingredients
    1 tablespoon canola oil

    6 ounces chopped andouille sausage

    2 cups chopped yellow onion (about 1 large)

    1 ½ cups chopped celery (about 2 large stalks)

    1 ½ cups chopped yellow bell pepper (about 1 large)

    6 garlic cloves, chopped

    2 tablespoons gochujang (Korean chile bean paste)

    4 cups chicken broth

    2 cups frozen sliced okra, thawed

    1 tablespoon filé powder

    ½ pound peeled and deveined raw medium shrimp

    3 tablespoons red wine vinegar

    1 teaspoon kosher salt

    ¼ cup sliced scallions (about 3 small)

    2 red Fresno chiles, seeded and minced

    Directions
    Heat oil in in a large Dutch oven over medium-high. Add sausage, and cook, stirring occasionally, until browned, 5 to 6 minutes. Add onion, celery, bell pepper, and garlic, and cook, stirring often, until onion is translucent, 3 to 4 minutes. Increase heat to high.

    Add gochujang; cook, stirring often, until vegetables are very tender, 5 to 6 minutes. Add broth; bring to a boil. Stir in okra and filé powder, and cook until slightly viscous, about 5 minutes. Add shrimp, and cook until shrimp are pink and cooked through, 3 to 4 minutes.

    Stir in vinegar, and salt. Spoon into bowls; top with scallions and chiles.

  4. I am very vintage because I am 70 years old. that really qualifies me as vintage. My husband mixes a regular can of corn and 1 of cream style corn with a big piece of butter. It's so very good. For Christmas I kind of made my own version of corn casserole, because it's only the 2 of us. I just used a jiffy corn bread mis and a car of cream style corn with some cheddar cheese. It was really good.

  5. Hi Mandy. Just a comment not a complaint. At least i hope it doesnt come across as a complaint. I LOVE your channel and I do try to do your recipes but i am having issues finding them. I am unable to print the recipe so i usually save your video in hopes that i can find it when i have the ingredients but more often than not once i am ready i cant find the recipe i want . I tried your website and cant find it there either. Its a bit frustrating. Sorry just thought i would share this. Sending you love from Canada. 🇨🇦

  6. I’m from Southeast Texas, but I have never heard of pineapple casserole and I’ve never eaten corn pudding before either. I asked my husband if he thought he would eat pineapple casserole and he made a face like Steven did! 😂😂😂. He said NO! I think the chicken Noodle Casserole sounds pretty good and I’ve had dishes similar to that.

  7. Mandy, thank you for all your great recipes and videos. I have tried several of them since I discovered your channel several months ago. I made the chicken and cheese noodle casserole for dinner tonight. It was delicious. Even my picky 8 year old grandson liked it. I was in a bit of a hurry and didn't have any onions or peppers so I used a frozen seasoning mix with those plus celery that I keep on hand. I also mixed all the cheese in the sauce because I was rushing and misread the recipe. It was still delicious. I think I am going to make it next time we have a holiday meal.

  8. I love pineapple on pizza, guess I should try this. But I do understand. So many people love tomato pie. YUCK!! I don't like warm or hot tomato slices. Marinara is fine. But if I get a hamburger that was warmed over with the tomato slice in it, makes me feel sick! Weird I guess. 🙂

  10. Hi Mandy! Oh my Gosh! I was so tickled to see the pineapple bake recipe! 16 yrs ago, my new Son-in-Law came to our house for Thanksgiving, and brought a casserole with pineapple in it. I had never seen, or heard of anything like that, and I didn't want to be rude, so I tried it. And, it was Love at first bite!! Now, he brings it for every get-together at my request. I've asked him for the recipe many times, and he smiles and tells me it's an old family recipe that he can't share, lol
    And, yes, I love pineapple on my pizza 😍 Happy New Year to you and your family from Ontario, Oregon

  11. I do like pineapple and cheese on a pizza but it also has ham and pizza sauce. I've never heard of pineapple casserole though. Lived in California, Colorado and New York.
    Corn pudding is A OK with me.

  12. You can take that same idea with the corn pudding and leave out the sugar, but stir in some browned sausage (with caramelized onions, if you want) and either cheddar or pepper jack cheese.

    My grandfather made something like ^^^^ that and he called it a sausage and corn stratta. My favorite was when he'd use fresh corn off the cob instead of canned 😋

  13. We make a similar corn pudding recipe, but we make it a sweet and savory version by adding a can of whole kernel corn and ham bits. Oh, and good call on reducing the sugar. Also, when I think of vintage food recipes, I think of tuna-noodle-casserole. Thanks for sharing, you guys make me laugh and fill my heart with joy. Happy Holidays!!!🎉🥳🎉

  14. FYI, in the world of antiques, anything older than 50 years is vintage and anything older than 100 years is antique (some say older than 75 years). Never heard of pineapple casserole. Interesting recipes. Thank you.

  15. I love corn pudding. I put crackers in mine instead of bread. Some other things do is add a can of regular corn to it. I also have added breakfast sausage brown crumble onions and pepper. It made a good casserole.
