  1. Today we’re challenging chef Andre Fowles, a THREE-TIME Food Network’s Chopped Champion to create a gourmet feast with a 10 lb King Crab.

    Chef Fowles is Jamaican born Chef who learned the basics of soulful cooking as a young boy from his grandmother. As you may know, Jamaican cuisine is known for its intense flavors utilizing various spices and herbs such as pimento, scotch bonnet pepper, cerasee, and more.

    The ingredient we’re working with today is a KING CRAB. These enormous crustaceans live in cold water and can grow up to 24lbs and be as old as 30 years old. They also reach sexual maturity at the age of 4-5, meaning it is important that we preserve the young ones to be sustainable.

    King crabs are known for their buttery, sweet, and delicate meat, but what makes them so delicious is their carnivorous diet, consisting of sea stars, worms, barnacles, clams, sea urchins, fish, sand dollars, snails, and more. This diverse and nutritious diet makes their meat so much more flavorful. Another fun fact about the king crabs is that their blood contains copper, giving it a blue pigment.
