*MEXICAN STREET CORN PASTA SALAD*
16 oz box of ditalini pasta
(2) 12 oz bags of fire roasted corn
1 red bell pepper
1/4 cup finely chopped red onion
3 scallions
1 1/2 cups mayo
1 Tbsp Tajin chili lime powder
2 tsp Maggi seasoning sauce
juice of 1 large fresh lime
1 Tbsp crushed red pepper flakes
salt & pepper to taste
1/4 cup Cotija cheese
garnish with fresh scallions
*ITALIAN PASTA SALAD INGREDIENTS*
12 oz rotini pasta
8 oz fresh mozzarella cheese
4.5 oz pepperoni
6 oz broccoli florets
2 medium carrots
5 oz jar artichokes
5 oz grape tomatoes
1 cucumber
2.5 oz can black olives
1/2 cup sliced pepperoncini
sliced red onion
1/4 cup grated parmesan cheese
DRESSING
8 fl oz Vinaigrette
2 Tbsp mayo
1 tsp Italian herb blend
1/2 crushed red pepper flakes
salt and pepper to taste
*MEXICAN MACARONI SALAD*
14 to 16 oz small to medium elbow macaroni
add 1 1/2 Tbsp chicken bouillon powder to boiling water
16 oz smoked or pressed deli ham
1 to 2 scallions
1 celery stick
1/2 cup pickled carrots
11 oz can of corn (drained)
start with 1 cup mayo made with lime
start with 1/2 cup sour cream
1/3 cup pickling liquid from carrots
2 tsp Maggi seasoning sauce
salt & pepper to taste
*HAWAIIAN MAC SALAD*
12 oz (340 g) elbow macaroni
1 medium carrot (shredded)
1 1/2 Tbsp dehydrated onion
3 Tbsp pasta water (to rehydrate onion)
1 1/2 cup mayonnaise
1 Tbsp tuna
1/4 tsp white pepper
1/4 tsp msg
1/2 tsp sugar (optional)
salt to taste

I can’t find any place to get the fire roasted corn in my area unless I order a case of 2 pound bags from Walmart. 🤪
Because you are adding red pepper flakes to all your pasta salads, I assume no children will be eating the salads. I don't eat hot and spicy, so me and the children will not be eating the spicy pasta. Anyone that wants red pepper flakes could so easily add it to their taste. Not everyone eats hot and spicy
All of these pasta salads sound delicious. I am going to try the Mexican street corn pasta salad as soon as I go to the store to get the ingredients. I have the Elote seasoning from Traders Joes and I put it on everything. Now I know what goes into the dressing I will make it from scratch. I probably could have eaten that whole big bowl by myself.

I never rinse or oil my pasta. It changes the flavor. I cook my pasta longer like you.That Maggie sauce has too much junk in it. I have to stick to mostly natural food items or I will get sick from it. Thank you for the delicious pastas, I love pasta salads. ❤

I'm guilty of having used frozen corn and peas and fruit directly from the bag myself, however pregnant people, young children, elderly and immune compromised people really shouldn't take the risk.

It looked really good and not mushy like some brands I've gotten. I'd like to buy the one you bought. My mother used to put cubes of cheddar cheese into her macaroni salad, too. All great recipes.
