Nah you're not finding the best BBQ in Cali, sorry. Michelin? I don't doubt the award, just I don't see anything here that earned it. Terry Blacks BBQ out in Texas look better than this, and even still they're just one of the greats, not even the greatest. Hard to decide, but this? Mid, and barely saw any actually cooked and served food throughout the entire video. It looks doable, but nah. Not worthy of a Michelin star, nor does BBQ itself NEED Michelins existence, PERIOD.
Interesting that they wrap their briskets in foil. I would have loved to be a fly on the wall during the discussions/tastings when this decision was made.
