You dont have to cook a brisket for 14 hours!!! Its actually stupid and a waste of time.

Great video, my only question was he never explained how he was Cajun. He made a comment saying his dishes were Cajun influenced because of where he was from but then said he was from Texas.i was wondering if he had ties to Louisiana ?

I met Amir when I went to Goldees and got to chat with him a bit as I was first in line so I was able to wander around. He was great to talk with and super excited about what he was doing and at that time, mentioned he was going to be opening his own place. I didnt realize until just now that RedBird was Amir's baby. Grats brother.
