Great compilation of curry seafood recipes since the method is different from longer cooking meats like goat, beef or chicken. The curry spice has to be thoroughly cooked without overcooking the seafood as you so expertly demonstrated. Have you ever considered bottling and selling your own blend of caribbean green seasoning? I can't find anything that is similar to it at the stores.

The first dish uses basically the same steps to make Jamaican brown stew except for the curry powder. At least how I think of it anyway. Trini in the house!!!
