  1. I make a version of piccadillo in the Instant Pot, and instead of the olives and capers, I use muffuletta in a jar from Costco! I use a couple tablespoons and a spoonful or so of the brine. It’s delicious and adds the saltiness and a kick of spiciness. Haven’t tried the raisins but I will next time.

    My wife has dementia and I am having to do the meals now. Your recipes are easy for me to follow and it's like watching the girl next door sitting at the island as she fixes supper for her crew.
    There's just the two of us and I'm wondering if you would please put together some "meals for 2" or tell me how to cut your recipes down.

  5. Hi Puerto Rican here – when I make picadillo, I do not put raisins in it and I love raisins but not in my picadillo- for sweetness to go with the saltiness, try sweet plantain- you can buy it in the frozen food section and they go perfectly with picadillo. Delicioso!!!!!
