  1. I roast coffee. NEVER freeze coffee, buy fresh whole beans from a local roaster, grind ONLY what you will brew, and store unused beans in an Airscape container. Have you people at ATK ever had good coffee??? I'm guessing not!

  2. I've heard some dumb things on YouTube over the years, but FREEZING COFFEE BEANS is right up there. This is as stupid as saying you should freeze lettuce to keep it fresh. I've just hit the unsubscribe button. I now really doubt the veracity of every other video I've watched on this channel. What a shame.

  3. Add dried chilies to this list (cayenne, Ancho, paprika, etc) if you buy in quantities. Keep smaller quantities in the fridge for daily use. If you keep chilies at room temp in a dark area, they will still turn brown and lose some of their flavour within 6 months.

  4. Better yet buy green coffee beans. Green coffee beans can be stored for up to a year without significant flavor loss. Roast only enough beans for a week or two and then store the roasted beans in an air tight container. Grind only enough beans needed for immediate use. Ground coffee loeses flavor very quickly. Air roasters for coffee and conical bur grinders are available at reasonable prices. Advantage are immense. You can roast green beans to the exact degree of doneness desired. All the way from a very light roast, full city roast at first crack to a very dark French roast. Use a variety of coffee brewers? Grind the freshly roasted beans course for a French press; medium grind for a drip pot or very fine for espresso. You will be surprised how much better your coffee will taste.   5. Dan has ZERO credibility. Terrible advice, pretty much all of it. Alton Brown already tested the science behind freezing coffee and it's a GIANT NO, if you've ever froze butter before you know how that story ends aswell. He spreads more false information than anything. Remember the time he said there's no point in marinating meat because the flavor doesn't penetrate? Like he's never salted a meal before? Guys a friggin moron stop using him in your videos

  6. It's my experience that the freezer imparts more off flavors and off textures than the fridge!!! I don't know if it is just because my freezer is not very good, but everything gets freezer burn and tastes weird if it spends more than a few weeks in the freezer. Like, I can't even handle the flavor of ice that I make in the freezer, even if I use filtered water! I buy all my ice. I only really store stock bones long term in the freezer. So basically, I will never follow any of this advice.
