  1. the 5 hour meal is more like 1 hour meal since a piece of meat of this size in the video would only take around 45 minutes to get to the right temp, and in the meantime you can make the ”redwine sauce” which is not actually a redwine sauce is just a reduced red wine emulsified with butter with beef stock… and also the potato puré u easily have time to make meanwhile your meat cooks, which isn’t really that time consuming in this small of a quantity. Pro tip, use a potato press instead of putting your puré through a fine strainer or chinois, and to put it hot, use plastic film and keep on very low heat on the stove, and just mix it a bit before serving, instead of reheating it as it would most definitely go lumpy again when the butter solidifies 🙂

  2. This is something, I don’t like. I’m sorry. He is probably a nice guy, but this is not made with love. No no no you cannot convince me. “Why not make it like, eh, idk with garlic bread or what ever, and, uhm add greens, i like ruccola but ya know, whatever.” No no no no love.
