With their delicate skins and creamy interiors, black-eyed peas are great when paired with a tart dressing and crunchy ingredients in a salad.

I tried this today. Used a blend of beans and a combo of pea shoots and baby lettuce. It was really tasty! I bet using plums or nectarines would be good too. I would also use apples and walnuts in the fall.
I'm all about trying new salad combinations. This one with black-eyed peas sounds fresh and flavorful.
Been looking for black eyed pea recipes this past week, THANKS! Will definitely try this, looks soooo good
what a beautiful, interesting, delicious salad
Any subsitute for the pea shoots? Difficult to find any kind of shoots in my area.
Using arugula for greens. 👍
Perfect recipe for right now.
Peaches are ripe on the tree and Black eyed peas are almost ready in the garden🍑🍑
You might want to poke those limes with a fork and put them in the microwave for 10 to 15 seconds to get more juice from them. This works on all citruses.
Aa soon as I can find some decent peaches will make..can't wait❤
Interesting! I need to find some good peaches and give this recipe a whirl 🙂
Try Chipotle. You will find a more complex flavor while controlled the heart.
Just made this! Thank you!
I'll pass on the jalapeno. Otherwise, it sounds good.
Fabulous TY
Sob! Renal diet says no nuts or legumes. This sounds totally delicious!
MEH….. no fruit or sweetener for me. I like them, but not in a salad.
Oh Julia, you always make me hungry. I'd love to try this. I was out with a friend on Thursday and we bought peaches at a roadside stand; they were so juicy that my wrists were covered with peach juice.
Yum! Wish I had this recipe weeks ago when peaches were at their peak.
This is a “yes” for me!!
Looks delicious. Plan to make it this week. Thanks!
Beans and fruit?
This is a "no" for me.
what a great salad, especially where we are with our Colorado Palisades peaches. BUT, could you or anyone suggest another appropriate bean substitute other than blackeye peas? None of us care for the texture or the taste. (not garbanzo for same reason!) Thanks so much!
So…no cooking the black eyed peas?
Would never think to make a salad with beans & peaches.
Julia my love, do you ever have a salad without dressing? I would not be a great guest at your lovely home if you put dressing on any/all salad(s). I love greens…, lettuce, cucumbers and 'matas' (tomatoes) without a drop of covering. Salt and pepper and maybe some other spices are all I require for my salad. Maybe some veg or canola oil… However, this salad looks very interesting.

Glaze those nuts !
I love Julia's tutorials and recipes.
