  1. I would've never thought to use the slow cooker! Thank you👍Tomatoes are so abundant now.😁One thing I started to do when making ratatouille… is siphoning some of the excess juices towards the end with a turkey baster & reducing it in a saucepan. Then pour back over. Wow it was it was so good! The sweet vegetable flavors were so concentrated. Would work here too I think. First time I did this we also put some of the ratatouille over Italian beef sandwiches from Portillo's in Chicago . Then dipped in the reduction. Heavenly!
