Chicken Spaghetti for TWO | CASSEROLE RECIPE



I am making creamy cheesy chicken spaghetti for two people, two different ways. I will show you my low carb recreation for when you are craving comfort food. This casserole is a family favorite dinner and is amazing!

INGREDIENTS
8 oz spaghetti pasta
8 to 10 oz cooked shredded chicken
6 oz shredded Colby Jack cheese
1 cup fire roasted vegetable mix (optional)
1/2 cup reserved pasta water
season and salt to taste

*Cream Sauce*
2 1/2 Tbsp unsalted butter
3 Tbsp all-purpose flour
1/4 tsp chicken bouillon powder
1 cup milk
1/2 cup sourcream
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp celery salt
1/4 cracked black pepper
1/4 tsp smoked paprika

*LOW CARB CHICKEN SPAGHETTI*
8oz Shiritaki spaghetti noodles
3 Tbsp hot water + 1/4 tsp chicken bouillon
4 Tbsp heavy cream
pinch of celery salt
1/4 tsp Kinder’s The Blend
pinch of onion powder
pinch of smoked paprika
4 oz cooked shredded chicken
1/4 cup fire roasted vegetables
1.5 oz shedded Colby Jack cheese

  1. Wow this is a great potluck dish as well. I know of a red sauce chicken spaghetti casserole that people are serving up at gatherings and it is so yummy. If you have that version, please share it. 😄

  2. I have made low carb by making my roux with almond flour and butter then adding unsweetened almond milk. Add the Ro-tel for flavor. You can add some cream cheese to thicken it up.

    By the same token I have used the same roux recipe with a bit of cream cheese and a splash of almond milk, adding cooked crumbled sausage for sausage gravy. I eat it on scrambled eggs.
